                            Recipe - Linseed Apple and Carrot Muffins

                    Tasty and healthy treat for the whole family to enjoy! Have a look at my last blog on the benefits of adding linseeds to your daily diet.
Ingredients
1 cup oats
1 cup linseeds
6 dates
2 eggs
1 cup milk
1 cup apple puree (homemade)
1 teaspoon vanilla extract
2 apples
3 carrots
1 1/2 cups flour
2 teaspoons bicarb
1 teaspoon baking powder
2 teaspoons cinnamon
1 tablespoon brown sugar
Method
- Preheat oven to 180 degrees
 - In a food processor add the the oats and linseeds and blend until they are a fine flour.
 - Add the milk, eggs, apple puree, vanilla and dates to the food processor and mix until well combined.
 - In a separate bowl add the flour, bicarb, baking powder and cinnamon - mix together
 - Peel and grate the apples and carrots.
 - Mix the wet mixture from the food processor in with the dry ingredients.
 - Fold in the grated apple and carrot.
 - Add about a tablespoon and half to each muffin case
 - Sprinkle brown sugar on top
 - Bake for 15 minutes,
 - Once cooked through remove from the oven and allow time to cool.
 
Note : they can be frozen once cooled completely.
