                            Spinach, goats cheese and caramelized onion tart

                            A delicious meal to be served with a leafy salad, or cut into small squares as a popular appetiser.
Once all the ingredients are prepared its really quick to put together and only needs 20minutes in the over.
Ingredients
Caramelized onions (see below for ingredients)
4 handfuls of spinach
1 tablespoon olive oil
1 garlic clove mashed
1 tub of soft goats cheese
1 roll of ready rolled puff pastry.
Caramelized onion ingredients
2 onions sliced
1 tablespoon butter
1/2 tablespoon sugar
500ml water
Method
- Add the sliced onions to a saucepan along with the butter, stir until butter is melted and coating the onions.
 - Add the water and sugar and bring to a simmer.
 - Leave to simmer for around 40minutes.
 - Once all the water has boiled down stir the onions occasionally to get them nice and caramelised.
 - Once caramelised - remove from the heat.
 
- Pre heat the oven to 200degrees.
 - Whilst the onions are cooking wash the spinach and add to another saucepan with a drizzle of olive oil and garlic.
 - Cook until the spinach is wilted. Remove from heat and add to a colander to drain any extra liquid.
 
- Line a baking tray with baking paper.
 - Place the ready rolled puff pastry on top.
 - Scatter the spinach and carmalized onion over the top leaving a 1cm edge of just pastry.
 - Add dollops of goats cheese (the more the merrier).
 - Place in the oven to bake for 20minutes until pastry is puffed up and golden on the edges.
 - Remove from oven - allow to cool for about 10minutes and then enjoy!
